Assessing My 1974 Mk 1 Action.

Recently purchased a 1974 MK 1 and would like to set its action optimally. Key dip is consistent across the piano at 3/8in, but the lowest and highest octaves sit ~ an 1/8 in higher than the middle of the keyboard. I can see that the action rail has been shimmed on either end of the piano. It seems like this would be the cause. Should I try removing these shims? If I do, it seems like it will throw my key dip off.
