I have a 1972 mark 1 73 key Stage Rhodes.

Could I buy either of the nameplates below, and put it on my piano? I know I would need a suitcase bottom or power supply already.

yes.  if you take off your stage namerail or just look behind it, you'll notice there is a hole covered by your stage nameplate - a hole for the suitcase pre cable.  You can just swap those out.

Now that I read my post, I need to clarify a little, sorry.
The namerail only has 3 holes in it. There aren't any extra holes. Would I be able to change the whole namerail?

darn I wish you had a Stage Mark II namerail to swap.  I have a Suitcase but I want to convert it to a Stage to save some room(and my back...AHAH).

but you need an amp for a stage, which takes up more room than a suitcase.

can't you leave the suitcase as it is, buy that little power supply thingy and take only the piano on the road?

then you can decide: run it directly into the PA or take a guitar amp with you. PA is great for mellow spacious sounds, guitar amp is often more aggressive, so it depends on what sound you want to achieve.

at home with the original bottom you have the cool look, the feel and the sound of a real suitcase - and you need less space!!!

ok, in europe rhodes are more rare than in the states, but without necessity (amp missing) i wouldn't convert a suitcase.
Tuning instruments makes the band sound thin!

You can Swap any namerail if that's what you're asking, both have RCA jacks and screw in just the same.  I switch out regularly if I want to use as a suitcase at home or switch to a stage at a show.  I just swap 2 rails I have.
